How it’s made

Made the old-fashioned way

1

Pressed through bronze

Dough is pushed through bronze dies for a rough, sauce-holding texture, then hung on rods or cut into shapes.

2

Slow-dried

Short shapes rest on wooden screens and long pasta hangs in the dry room, drying slowly, the old-fashioned way.

3

Packed by hand

Finished pasta goes into our bags with your private label tag or, for custom manufacturing, into the bags and boxes you send us.

Questions

Shapes, answered

Quick answers on our shapes and capabilities.

Which shapes do you make?

Long cuts (spaghetti, linguine, fettuccine, angel hair), short cuts (rigatoni, ziti, macaroni, fusilli, shells, fiori, campanelle, conchiglie), novelty cuts (Santa, dinosaur, pumpkin, heart, bunny and more), and organic einkorn (spaghetti, linguine, angel hair, fusilli). See the full catalog.

Are novelty shapes only seasonal?

No. Our seasonal and novelty shapes are available all year, alongside our everyday long pastas and flavored lines.

Which shapes come in organic einkorn?

Spaghetti, linguine, angel hair and fusilli. Learn about einkorn.

Does the minimum depend on the shape?

Yes. Estimated minimum runs start around 700–750 lb for long cuts and organic einkorn, around 1,200 lb for short cuts and novelty cuts. All figures are estimates. Larger runs are available, and we confirm exact amounts on your quote.

What dies do you use?

Bronze dies are our standard. They give pasta a rough, bronze-cut texture that holds onto sauce. Non-bronze die pasta is also available by special order if you’d like a smoother, glossier finish. Just mention it on your quote.

Can I put these shapes under my brand?

Yes, through private label (our pasta, our bags, your private label tag) or custom manufacturing (your ingredients, made by us).
